What Is a Bavarian Cream Donut? And How Is It Not a Bismark?

A Bavarian cream donut is a raised donut filled with the thick, custard-style cream — not fruit, not pudding, and not quite the same thing as a Boston cream. It is the item people point at in the case without knowing what to call it.
What the name actually means
Bavarian cream is a real term from classical pastry, not a flavour invented for a donut case. It starts as a vanilla custard and is then built so that it sets — firm enough to hold its own shape rather than running out the moment you bite.
That one property is why it works in a donut. A loose custard in a raised donut is a mess on your shirt and a disappointing amount of filling, because the shop has to be sparing with it. Something that holds its shape can go in properly. When people say a filled donut was "actually filled," this is usually the filling they are describing.
Bavarian cream, Bismark, Boston cream, custard
These four names get used interchangeably and they are not the same. Here is how they sit on our board and in general use:

Who should order it
- You want the filling to be the point. Not a glaze, not a topping — the inside. This is the one built around that.
- You find fruit fillings too sharp. A lot of people order a filled donut once, get raspberry, and decide filled donuts are not for them. Try this before you write off the whole category.
- You are buying for a group and want a safe rich option. Vanilla custard is close to universally liked. It is a better box-filler than anything tart.
- You are eating it now, not later. Honestly: a filled donut is a this-morning item. If you need something for tomorrow, buy a cake donut instead and we would rather tell you that than sell you the wrong thing.
And the one caution worth printing: do not eat it driving. A filled donut in a moving car is a decision people make exactly once. What actually travels well.
