What Coffee Goes With Which Donut? A Pairing Guide That Is Not Precious About It

Most pairing guides are written by people who want you to swirl something. This one is written for a car at 5:40am. The rule underneath all of it is simple: the coffee should push back against the donut, not agree with it.

The one rule

A donut is a sugar delivery system. So is a coffee with three creams and two sugars. Put them together and neither one has a job — you get a single flat sweet note and the donut you paid for stops being the point.

So: the sweeter the donut, the blacker the coffee. That is the whole theory. Everything below is just that rule applied to the board.

Three situations, not flavours

In practice people do not choose by flavour profile. They choose by what the morning looks like.

If you do not drink coffee

In Utah this is not a footnote — it is a large share of the room, and the pairing question is exactly the same one. You want something cold and sharp against something warm and sweet.

At the Ogden shop that is a dirty soda from The Soda Run counter: fountain soda with cream and a flavoured syrup, usually coconut or lime. It does the job coffee does. What a dirty soda actually is, if you are new to it.

Cold milk is the other honest answer and nobody ever says it out loud. With a cake donut it is better than mediocre coffee and it is not close.

What we pour

Fresh ground coffee, $2.50, at the Ogden and St. George shops. It is Perks, a Southern Utah roaster — worth reading if you want to know why a donut shop bothered choosing. Spanish Fork does not have the coffee program; it has The Soda Run next door instead.

Common questions

What coffee goes best with a glazed donut?

Black, and a little stronger than you would normally take it. A glazed is almost entirely sugar on the outside, so a coffee with cream and sugar in it gives you sweet against sweet and the donut stops registering. Dark and unsweetened is the counterweight.

What is the best donut to have with black coffee?

An old fashioned. It is the pairing the category was built on — the crisp fried edges and the faint tang in the batter have something to push against, and neither one flattens the other. A buttermilk bar does the same job with more surface area.

What should I order if I do not drink coffee?
