Why We Open at 5am — And Who Is Already Awake in Utah

All three of our shops open at 5:00am, six days a week. That is earlier than almost anything else in the towns we are in, and it is the single decision that shapes everything about how we work.

Who is actually awake at five

More people than you would guess, and they are not the people a bakery usually plans for.

  • Shift workers. Six o'clock starts mean five o'clock breakfasts. Hospitals, plants, construction, warehouses.
  • People driving somewhere far. St. George at 5am is full of people heading to Zion or on to Vegas, trying to beat the heat and the traffic.
  • Parents in the gap. The hour before the house wakes up is the only quiet one some people get.
  • Anyone who has been up all night. No judgement. You are welcome.

What five o'clock costs us

Opening at five means starting at one or two. The dough for the kolaches has to rise. The fillings have to be prepped and portioned. The cronut dough has to be laminated — folded around butter over and over, with chilling in between — which cannot be rushed and cannot be done later in the morning.

By the time the doors open, the day's work is largely finished. That is why we run out of things: everything you can buy at eleven was made before five, and there is no second batch.

What this means for you

Two practical consequences.

First, early is genuinely better. Not as a marketing line — a glazed donut at 5:30am is a different object from the same donut at 2pm. The kolaches are all still there. The cronuts have not gone. The case is full.

Second, if you want something specific, come early or call ahead. Kolaches are usually the first to go, cronuts not far behind. By mid-morning you are choosing from what is left, which is still good, but it is not the whole board.

Closing times, which are not all the same

  • Spanish Fork — 5:00am to 3:00pm Mon–Thu, to 2:00pm Fri and Sat
  • Ogden — 5:00am to 3:00pm Mon–Sat
  • St. George — 5:00am to 3:00pm Mon–Thu, to 2:00pm Fri and Sat
  • All three closed Sunday

And from 2:00pm Monday through Thursday, donuts are half price until close at Spanish Fork and St. George — because we would rather sell what we made this morning than have it be yesterday's tomorrow. Ogden does not run that one.
