Breakfast for a Work Crew: What to Order When You Are Feeding Twenty at 5am

If you are feeding a crew at five in the morning, order large kolaches — egg, potato, meat and cheese baked into bread. It is a real meal, it holds a working person until lunch, and it survives a truck cab. We are open from 5:00am, which is the part most places cannot do.

Why kolaches, not donuts

Donuts are the easy order and the wrong one for a crew doing physical work. A box of glazed is sugar and air: welcome at six, forgotten by eight, and everybody is hungry again by nine.

A large kolache is the opposite. It is bread wrapped around bacon or sausage, egg, cheese and potato. It eats with one hand, it does not shed icing on anyone's gloves, and it keeps a person going through a morning of actual work.

The right order for most crews is mostly kolaches, some donuts. The kolaches are breakfast. The donuts are morale.

Two adjustments worth making. If the crew has a long drive to the site, add a few extra — somebody always eats one in the truck. And if it is a hot day and the work is heavy, lean even harder on the kolaches.

What it costs a head

At single-item menu prices:

  • One large kolache and one donut — roughly $6.25 to $7.00 a person, depending on the donut.
  • Two large kolaches$9.50 a person.

For comparison, that is less than a fast-food breakfast sandwich and a drink, and it is actually made that morning. Call the shop about ordering in quantity.

Which kolaches

All four large kolaches are $4.75, and a mixed order is the safest bet for a crew — people have opinions about gravy.

  • Bacon, egg, cheese and potato — the safe default. Nobody complains.
  • Sausage, egg, cheese and potato — the other safe default.
  • Sausage, egg and gravy — the one people either love or avoid.
  • Ham Ranchero — for the ones who want some heat.

Timing, and why you should call ahead

We open at 5:00am, Monday through Saturday. Crews start early and so do we — that is the gap we fill.

But this matters: call the day before for anything over about six large kolaches. We bake to the morning rather than to a target, which means we do not hold a pile of stock back on the chance a crew walks in. The large kolaches go early. If you call ahead, yours are set aside and ready at five. If you do not, they may not be there.

Keeping them good in the truck

Large kolaches hold up well for the morning. If some are left at lunch, they are fine to eat later but should go in a cooler or a fridge rather than sitting in a hot cab all day — there is egg and meat in them. How long everything keeps, item by item.
