How Many Kolaches Should I Order for a Group?

The short answer: one large kolache per person if it is the meal, or two small per person if it is. The longer answer is that the two sizes are different foods, and ordering as though they are the same is how people end up short.
Start with which size you are buying
A small kolache is $2.50. Meat and cheese baked into soft yeast dough — ham and cheese, sausage and cheese, or either with jalapeño. It is a substantial snack. One of them alongside a coffee is a light breakfast; on its own it is not a meal for someone who has been up since four.
A large kolache is $4.75 and adds egg and potato. Bacon, egg, cheese and potato. Sausage, egg, cheese and potato. Sausage, egg and gravy. Ham ranchero. That is a breakfast, and most people do not want a second one.

By the dozen, small kolaches are $26.50 and large are $49.50. For a crew of eight who have not eaten, a dozen large at $49.50 is the simple call and leaves a few over. For a meeting of twelve where breakfast is a courtesy rather than the point, a dozen small at $26.50 alongside a dozen donuts does more work for less money.
The part people get wrong
Ordering all one filling. A dozen sausage, cheese and jalapeño is a confident choice and a percentage of any group will quietly not eat it. Split the order. Two kinds across a dozen is enough variety for most crews, three if you are feeding a mixed office.
The other one: assuming they will be there. We bake a set number each morning and they sell out, usually well before the end of the day. That is fine if you are buying two on your way past. It is not fine if you are the person who told eleven colleagues there would be breakfast.
So call ahead
For a couple of dozen or more, give us notice. It costs you a phone call and it is the only thing that guarantees a specific filling is set aside rather than sold to whoever walked in at 6am.
All three shops open at 5:00am, Monday through Saturday, closed Sunday. If you need a large order first thing, tell us the day before and it will be waiting.
